Breakfast Burritos!

My mornings are typically spent rushing to get ready for work, running out the door and rushing to work. I usually don’t have time for breakfast and honestly, just started to eat breakfast. You know, the most important meal of the day, yeah, I’ve been missing that.

The other day I seen a Breakfast Burrito on TV (oh those commercials). I got a craving so I made sure it was part of my list when I went grocery shopping. As I knew that I would make more than we would eat in one sitting, I figured that it would be great to freeze and take to work for a quick breakfast meal.

I was right!

I used flour taco shells, which made them smaller than a regular Burrito, however, the amount was enough to keep me satisfied.

I forgot to count but I think I got 16 total! Most people would probably eat 2, like I said, 1 did it for me.

So…

Here’s what I did (see complete recipe below):

Gather your ingredients:

Brown Sausage, peppers and onion, minced garlic in pan on medium heat

cook thoroughly

whisk eggs, add a little milk, garlic powder, salt and pepper.  Scramble eggs separate from sausage until cooked.

Now Add cooked sausage, scrambled egg and cheese to a bowl, combine.

Add a couple spoonfuls to the Tortilla

Wrap Tortilla up in true Buritto form

I wrapped mine up in wax paper and placed them into a Zip Lock bag.

I just grab one out the the freezer in the morning to take to work!

Be sure you unwrap from wax paper before you place it into the microwave.

Mine took about a minute and a half to reheat. But that will vary with different microwaves.

Stacey’s Breakfast Burrito’s

Makes 16 Small Breakfast Burrito’s

1- roll of Jenny-o HOT Turkey Sausage

1/2 of a Green Bell Pepper

1/2 of a Red Bell Pepper

1 Medium Onion

2 Tbsp of Minced Garlic

8- Medium Eggs

4 oz of Sharp Cheddar Cheese

Flour Taco Shells

1/4 Tsp-1/2 Tsp of Salt

Pepper

Garlic Powder

1. Brown HOT Turkey Sausage with peppers, onions, and garlic

2. whisk eggs with a little milk, add salt, pepper and a few shakes of garlic powder.

3. Scramble eggs until cooked

4. combine eggs, sausage and cheese

5. Add a couple spoonfuls to a Flour Tortilla, wrap into a Burrito form

or

Wrap in wax paper, or foil and place inside a freezer bag. When ready to eat, remove wax paper/foil and heat in microwave for 1-2 minutes (depending on microwave).

    1. Let me know how he like it. I also like that you ow everything s going in them. Even though I will purchase frozen breakfast items on occasion, I feel like the eggs aren't "real" LOL. Really they just taste different. Haha
  4. Didn't think about freezing them!! I actually made them tonight for dinner but we used chorizo cause thats apparently what you so in South Texas, haha!
    1. Haha! I love chorizo! I only ever ate it mixes with scambled eggs and potaotoes! Maybe I will use Chorizo next time though!!
  5. I am such a huge fan of breakfast burritos. They are easy to make and they are easy to munch on the road. Like you've mentioned, I love that they can be pre-made, frozen, and popped in the oven.

    1. Yes! If you make the same size that I made, then you should get around 16. So, even if you ate two, you will have plenty for a week!
