Hey all! I hope everyone is doing great. I haven’t posted any recipes in a while, and well, this is really something that I’ve actually posted prior but with a little but of a St. Patty’s Day twist! Valentine’s Day of 2015 I shared a Red Velvet Cupcake recipe that is to DIE for! I turned those beautiful red sumptuous cupcakes and made some BIG green Velvet Cupcakes! Unfortunately I have a bit of a sugar problem and ate two of these for dinner the other night, and then another after work the next day.


I truly need to only make anything with sugar during family functions or to give them away. Sugar is truly my weakness! green2

I know that St. Patty’s Day is later this week, but I made these early as I will be out-of-town for the weekend. I’m going with a couple of friends from work to an educational seminar in Atlantic City, so be prepared to hear all about any adventures we may run into while we are there!


I’m sure my little guy will have fun with his dad, they’ve been on a workout kick lately and I could totally see them creating a punching bag while I am away. But anyhoo, I hope your St. Patty’s Day! is as sweet as these cupcakes! And to all the drinkers in the room, remember, don’t drink and drive. 😉
